Recipe: Chicken A La King

Hey all! Awesome Leslie Sanchez sent out an email the other day containing the recipe for her dish made at the last cooking meet up, and I thought I would stick it up here on the blog. Have at it!

Hello all,

This is the recipe for that dish I made last cooking meet up.
Hope you enjoy!

This recipe serves about 4-6 people.
INGREDIENTS:
1 (4.5 ounce) can mushrooms, drained,
liquid reserved
1 green bell pepper, chopped
1/2 cup butter
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon ground black pepper
1 1/2 teaspoons chicken bouillon powder
1 1/2 cups milk
1 1/4 cups hot water
4 cooked, boneless chicken breast
halves, chopped

DIRECTIONS:
1.Cook and stir drained mushrooms and green pepper in butter or margarine over medium heat for 5 minutes. Remove from heat. (To make it healthier, you can always just use a dash of olive oil/canola oil)
2.Blend in flour, salt, and pepper. Cook over low heat, stirring constantly, until mixture is bubbly. Remove from heat.
3.Stir in instant bouillon, milk, water, and reserved mushroom liquid. Heat to boiling, stirring constantly. Boil and stir for 1 minute.
4.Stir in chicken. Heat through.


Also, what's great about this recipe is you can add any vegetable of your choice, also, this helps if you dislike mushrooms..etc.

After making the dish, you can serve this with any side dishes you like such as bread or rice.

The Filipino style recipe calls for placing more veggies (exclude the green peppers) and add Mozzarella cheese! Basically you can use the same recipe with added veggies (I like adding zucchini, broccoli, cauliflower, and carrots).

In a baking dish, you place the rice in the bottom, then add the cooked chicken a la king mixture (w/ veggies) on top. Place about a cup or two or grated Mozzarella cheese on the very top then bake!!! Basically, we just want the cheese melted!

Viola! There you have it!
